Nepalese Dhikri (steamed rice cake)

Nepalese Dhikri is made by Kabita, a 19 year old girl who we have given physical rehabilitation and mobility aids to help her walk and be more independent. The exercises we have taught her allow her to participate in cooking at home with her mum. She can be seen shaping the Dhikri dough in the pictures below. It is prepared by making a dough with warm water and rice flour. The dough is given a shape of sausage, then steamed by placing a cotton cloth over it. Ingredients

  • 1 cup warm water
  • 2 cups ground rice flour
  • 1 tsp salt
  • 1 tbsp oil
Preparation Time: About 30 minutes
Cooking Time: 20 minutes
Servings: 3-4 people as a side dish
 
 
Instructions:
  • Mix flour and salt in a large bowl
  • Gradually add warm water to the flour whilst stirring with a spoon then kneading until in smooth and pliable ‘roti’ or dough texture.
  • Take a golf ball sized portion of dough and knead into various small shapes – e.g. balls, sausages
  • Grease the steamer or line with a banana leaf to prevent sticking.
  • Place the dhikris on the tray with some space between them and steam for 15- 20 minutes, or until firm.
  • Serve warm with chutney, pickles or curry.
Notes and tips:

If the dough cracks while shaping, add a little more warm water and knead again. You can enhance the flavour by adding a pinch of cumin seeds or turmeric to the dough.
